The official changelog from Apple mentions the following changes:

  • Resolves bugs with Documents in the Cloud

  • Contains security improvements iOS 5.0.1 beta introduces a new way for developers to specify files that should remain on device, even in low storage situations.
This update does not seem to be delta at this time (you need to download the whole thing). It may also not be available over the air currently. There is no word about when it will be available to everyone. If you are a dev, you can grab your copy here: http://developer.apple.com/devcenter/ios/index.action
